(No-Bake) Strawberry Energy Bites

I have been trying to snack less on junk food SO I thought I would give something new a try. These no-bake strawberry energy bites were just what I was looking for. They are quick, have better ingredients, and are tasty!
Want to try them for yourself? I used: 1 cup of oats, 1 bag of freeze-dried strawberries, 1/3 cup peanut better, 2-3 tablespoons of honey or maple syrup, 1 teaspoon vanilla extract, 2 - 3 tablespoons almond milk or milk of choice. Side note: You can also add in some protein powder if you want but not necessary.
Now that we know what we are working with, it is time to throw it all together! First things first, grab those freeze dried strawberries. We want to crush them into a powder we can mix in. You can use a blender or even just crush them in a bag. Both will get the job done! Second, we want to add the 1 cup oats, crushed strawberries, and any protein powder (if you opted for that.) Stir, stir those ingredients together. Once you feel everything is mixed, we want to move onto the wet ingredients. This is when we add the 1/3 cup peanut butter, 2-3 tablespoons of maple syrup, and 1 teaspoon of vanilla extract. You really want to try to achieve a dough like consistency so this part is important. When you go to add your 2- 3 tablespoons of milk, add it in little by little. This way, you can keep an eye on the consistency. If you end up using 3 tablespoons and find it is still too dry - NO WORRIES. Continue to add in more milk, little by little, until you reach the desired thickness.
Next is the fun part! Using your hands, roll the mixture into balls. I rolled mine to be quite small so that they would all fit on a plate but feel free to do this part as you please. When you have them all rolled out, place them on a plate and chill them for a minimum of 30 minutes. After they are done chilling, they are ready to eat!
If you want to add more flavor, don’t shy away from adding even more strawberry or maybe even adding in a few chocolate chips.
Overall, I loved this recipe for its quickness and satisfying my sweet tooth. Plus I found it a lot more filling than my usual bag of chips.
